How to Make Homemade Extracts – Vanilla, Lemon and Almond

We've made pancake syrup from maple trees, we've done it for decades. Here's a way to make pancake syrup from birch trees:

I have a chocolate mint plant, I will be trying this!
I make syrup from hickory trees. You wash and boil the bark, or the nuts, even the inside cambium layer. Strain well, and start adding sugar until it's the consistency you want.
It has a light, hickory nut flavor. My parents liked their pint so much they ate pancakes every day until it was gone.
The stuff sells for $18 a pint in those gourmet /kitchen stores.

Oh, and I've been making vanilla extract for years.
A friend of ours decided to drink the vanilla flavored vodka because he liked it so much...and then, he said that rum flavored with vanilla makes a pretty good sipping drink, too!

I'm going to try the hickory syrup this fall, I'll be out there along with the deer and other critters fighting over the nuts.

You can make hickory syrup from the bark, too. Here's my recipe:
Make a decoction extract: You can use the hickory shells, or outer, or inner bark, or all three. Wash all with a small brush and warm water to remove debris. You should have enough bark/shells to loosely fill two one quart mason jars.
Place in a large stock pot and cover with about 8-10 cups of water. Boil for at least 20-25 minutes.
Strain out the bark, return the liquid to the pan, and bring to a boil. Reduce to medium heat.
Gradually add sugar stirring as you go until it reaches the syrup consistency you prefer. I used about 8-10 cups per batch.
