Sprouts are great to eat for everyday living and especially so in an emergency situation. Typical foods set aside for storage are traditionally low or nonexistent in vitamin C and many of the B vitamins. Yet it is exciting to know the seeds from those same storage foods can be sprouted to give a rich source of these important nutrients. Sprouts are an excellent source of vitamin C and also contain many good B vitamins. And you probably won't find a less expensive way to get these vitamins than from low calorie sprouts. Green leafy sprouts are also a good source of vitamin A. Sprouts are a good source of fiber, protein, and contain enzymes that aid digestion. In addition, sprouting destroys the seed's natural preservative enzymes that inhibit digestion.

Growing Sprouts

If you're new to eating sprouts, don't make too much at first. Once you get the hang of it, you can start another jar three days after you start the first jar. The next jars will be ready after you finish eating the first batch.
The most important point: when you strain seeds, make sure that they're really strained. Sprouting is remarkable; all you need are the seeds and water. But add too much water and the seeds may rot. Nevertheless, it's pretty difficult to make the seeds rot, as long as you follow the steps carefully. ---CONTINUED---

Sprouting can be done without any specially purchased equipment. All that is needed is a wide mouth quart jar; a piece of nylon tulle, cheesecloth, or nylon stocking; and a canning jar ring or a rubber band.
Grains, beans, and seeds can all be sprouted. They can be used in soups, stews, casseroles, salads, sandwiches, bread, pancakes, omelets, granola, and as snacks. They can be stirred into yogurt, cooked cereal, and sandwich fillings or used anywhere that lettuce is used. Sprouted grains, beans, and seeds (all referred to, hereafter, as seeds) all cook faster than the unsprouted seed.

Sprouts for Preppers

They can be had and done in a million and one ways, eliminate some of the climate issues we face in both hot and cold environments, require little space and little time, and are packed with nutrients.
