Storage life for salt is indefinite. So long as you do not let it become contaminated with dirt or whatever, it will never go bad. Over time, iodized salt may turn yellow, but this is harmless and can still be used. Salt is rather hygroscopic and will adsorb moisture from the air if not sealed in an air-tight container. If it does cake up, it can be dried in the oven and then pulverized again with no harm done.

I have found salt to be a highly over looked item in most people's planning. First just on the surface the human body needs salt. Yes to much is bad but just like fat to little is even worse. The human body needs salt to function. Sodium is the main component of the body's extracellular fluids and it helps carry nutrients into the cells. Sodium also helps regulate other body functions, such as blood pressure and fluid volume, and sodium works on the lining of blood vessels to keep the pressure balance normal. The National Research Council of the National Academy of Sciences in Washington, D.C., has determined that the recommended safe minimum daily amount is about 500 milligrams of sodium with an upper healthy limit of 2,400 milligrams. Now many Americans are consuming 6,000 or more milligrams a day now and that is simply to much.
