From Alan's Stuff: Prudent Food Storage-Sugar, Honey and Other Sweeteners

There are a wide number of sugars to be found for purposes of sweetening foods. Fructose is the primary sugar in fruit and honey; maltose is one of the sugars in malted grains; pimentose is found in olives, and sucrose is what we know as granulated or table sugar. Sucrose is a highly refined product made primarily from sugar cane though sugar beets still contribute a fair amount of the world supply. Modern table sugar is now so highly refined as to be virtually 100% pure and nearly indestructible if protected from moisture. Powdered sugar and brown sugar are simple variations on granulated sugar and share its long life.
Liquid sweeteners do not have quite the longevity of dry sugars. Honey, cane syrup, molasses, corn syrup and maple syrup may crystallize or mold during long storage. These syrups are chemically not as simple as table sugar and therefore lose flavor and otherwise break down over time. ---CONTINUED---

Making maple syrup
http://www.backwoodshome.com/articles/shaffer59.html
By Marcella Shaffer
The art of making maple syrup is generally attributed to the Native Americans. Early settlers arriving in America learned the skill from them. They then went on to improve on the Native American's techniques by creating devices for tapping and collecting the maple tree's sap. These same basic devices and techniques are still used in America today to produce the maple syrup that we enjoy on our pancakes and waffles.
Anyone with access to maple trees, a few tools and equipment, and some basic how-to can make this delicious syrup. If you have never tasted pure maple syrup, you are in for a wonderful experience. In addition to its use as a topping for breakfast foods, maple syrup can also be made into toppings for ice cream and pastries, treats for the kids, or, in a pinch, a source of sweetening. ---CONTINUED---

MAKING MAPLE SYRUP AT HOME
http://www.endtimesreport.com/MAPLE_SYRUP.html
by New England Gardener
I can't tell you if you can make Maple Syrup where you live, but I believe it can be made in most of the Northeast, and anywhere else with Sugar Maple trees and similar weather. It takes about 40 quarts of sap to make one quart syrup. You tap the trees in mid Winter, and Sap will start to flow when the days are warm, and the nights are cold. The farther above freezing it gets during the day, and the farther below freezing it gets overnight, the more the sap will run. ---CONTINUED---

Putting the Foods You Love Into Food Storage
http://everythingunderthesunblog.blogspot.com/2008/11/book-2.html
Sugar: These are some of the items you don’t need to can or vacuum seal. Keep them in their original containers or you can place them in buckets with lids. Baking powder test: 1 tsp in 1/3 c hot water = water fizzes.
Brown sugar: 2 Tb Molasses, 1 cup white sugar. Mix with pastry blender until blended. You can also vacuum seal brown sugar in mason jars to keep it fresh for years.
Corn syrup: 1 c sugar + 2 c water. Cook in canning jar in solar oven about an hour or until thick.

Shelf Life of Sugar
http://www.eatbydate.com/other/sweets/how-long-does-sugar-last/
How Long Does Sugar Last? How long does sugar last? Does sugar go bad? Does brown sugar go bad? The shelf life of sugar depends on the best before date and how the sugar is stored. Refined (white) sugar is actually a drug that accounts for the most common addiction in society today. It’s actually the only taste that we are born desiring. Sugar elevates the blood glucose level in the body and contributes to obesity, diabetes and tooth decay… but at the same time it sure makes food hard to resist!
So, does sugar go bad? Not totally… when properly stored, the shelf life of sugar past its best before date is ... ---CONTINUED---

Can sugar get moldy?
http://food.answers.com/Q/can_sugar_get_moldy
Answer by MathTeacherGuy
Yes. Sugar can support mold. This is more likely to occur if there are complex carbohydrates present, like flour or bread crumbs.

Sugar-Storing Tricks: The Right Way To Stockpile It For Years And Years
https://www.offthegridnews.com/how-to-2/sugar-storing-tricks-the-right-way-to-stockpile-it-for-years-and-years/
Whether you are purchasing it for long-term emergency storage or just for your kitchen pantry, you may wonder how long sugar will last.
Well, the answer can be “indefinitely” if sugar is stored correctly. The package of sugar you buy at the store may include a “best before” date. According to the U.S. Sugar Co., headquartered in Buffalo, N.Y., you may safely use sugar long after that date.
However, the quality of sugar depends on how it is stored. Sugar is highly absorbent, so you must keep it away from any kind of moisture. Even sugar that is exposed to humid air may begin to harden and clump.
