Re: Milk . . . . .
An old post, rescued fro my personal archives, from American Preppers Network, before some of their old posts were lost:
Drinking Evaporated Milk
Muzhik @ American Preppers Network
You add one cup evaporated milk for every gallon of reconstituted powdered milk to add a milk-fat to the milk. I've also seen recipes where you add one teaspoon (tablespoon?) of vanilla to the mix to improve the flavor. Letting it chill in the fridge overnight always helps.
===========================
From O Chef
http://www.ochef.com/914.htm
Evaporated milk is simply milk that has had about 60% of its water removed. It is routinely mixed with an equal amount of water and used in place of milk, but generally only in cooking. It has a somewhat unique taste, "a bit sweet," according to some; "canned" in the words of others and not universally loved. No one in our acquaintance admits to mixing up batches of reconstituted evaporated milk to drink.
================================
http://www.goodhousekeeping.com/food/cooking/condensed-milk-1101
Evaporated milk can be diluted with an equal amount of water and substituted for fresh milk in recipes and even for drinking.

A Very Rich Gallon of Milk: Measure 3-1/2 quarts (14 cups) of water into a gallon size pitcher. Add 5-cups of dry milk powder and a 12-ounce can of undiluted evaporated whole milk. Mix all together. Chill and serve. This makes about a gallon. It is richer than plain reconstituted milk. If you must use powdered milk, but prefer a richer product, this is the recipe for you. Children will sometimes tolerate it better than straight reconstituted milk, especially if they are already used to fresh 1% or 2%.

To use evaporated milk in place of milk in recipes or for drinking, mix with equal
amounts of water. Directions: Wash top of can before opening. Punch two
holes in the top of can. Mix one can of evaporated milk with one can of water.
Refrigerate for 2 to 3 hours before using. Use within 7 days!

Powdered Milk
http://www.hillbillyhousewife.com/powderedmilk.htm

Instant nonfat powdered milk is to the urban dweller what the family cow is to the homesteader. True, powdered milk doesn’t taste as good as fresh milk from the cow, but it is a darned site more convenient to procure, and much easier to store. Additionally, it is a readily available source of protein and vitamin D. It’s also high in calcium which is good to know if you are pregnant, nursing or have osteoporosis in your family history. Since powdered milk has no fat, it’s low in calories (about 80 per cup of liquid milk) and completely cholesterol free.
-snip-
Once reconstituted, powdered milk tastes a lot better than it used to. If you haven’t tried it in the past few years, it’s worth another taste. When mixed correctly and chilled overnight, it has a pleasant, sweet flavor that tastes especially good with homemade cookies. Reconstituted milk doesn’t taste the same as fresh whole milk. If you are already used to skim milk though, you won’t notice much difference in the flavor of reconstituted milk. In cooking, powdered milk performs flawlessly. It can be substituted for fresh milk in almost any recipe with excellent results. Many budget conscious women cook with powdered milk exclusively. This is smart use of resources because the results are so good.

The Great Powdered Milk Taste Test and Review
http://selfrelianceadventures.blogspot.com/2010/03/great-powdered-milk-taste-test-and.html
Ever wanted to find a powdered milk that tastes good? You're not alone. So just in case you don't want to go through the expense and hassle of trying out every kind of powdered milk you can find, read on. I did it for you.
After a comment about the flavor of powdered milk on another post, I hatched a plan to have folks try a bunch of different kinds of powdered milks to maybe find one that tasted good so this reader and anyone else who wants to know (including me) will know which brands would be best to buy because you know powdered milk is not cheap. I had some super help with this milk experiment from Emergency Essentials, Grandma's Country Foods, Walton Feed, Blue Chip Group (now Augason Farms), and Honeyville Grain who all donated some of their milk for the review. Thank you to all of you--we couldn't have done it without you!
So here's the basic setup. ---CONTINUED---

Chocolate Powdered Milks Review and Taste Test
http://selfrelianceadventures.blogspot.com/2010/03/chocolate-powdered-milks-review-and.html
Remember when we tasted the powdered milks? Yeah, it seems like a long time ago. Well, we also tasted two kinds of chocolate powdered milks--Honeyville and Morning Moos. These are not like Nestle Quick or Ovaltine that you add to milk. They are drinks (actually milk substitutes) that you add straight to water to get a chocolate milk. ---CONTINUED---

Making Canned Milk Products from Powdered Milk
http://selfrelianceadventures.blogspot.com/2010/01/making-canned-milk-products-from.html
Back when I started storing food I stocked up on some canned milk products like evaporated milk and sweetened condensed milk. I've found they don't store very long--the expiration date on the can is pretty much all they're good for and I don't use them often enough to rotate through them quick enough. So check out my post over on Utah Preppers for some information on making evaporated milk and sweetened condensed milk from powdered milk. Powdered milk stores way longer than canned milks (I'm currently using powdered milk canned in 1998 and it's fine), so making it from powdered is the route I'll be taking from now on for my canned milk needs. ---CONTINUED---

ImageWhen I started storing food, I thought it would be a good idea to store forms of canned milk like evaporated milk and sweetened condensed milk. I bought quite a few cans and have used most of them over the years. However, I only have two recipes I regularly make that call for evaporated milk, and one that calls for sweetened condensed milk, so I did not use every can I purchased before they expired.

I will not be storing canned milk products anymore, instead I will be making them when I need them with powdered milk which stores a lot longer than the canned milks (and is less expensive). Here are a couple of recipes: ---CONTINUED---

The Benefits of Powdered Milk
http://modernsurvivalblog.com/survival-kitchen/the-benefits-of-powdered-milk/
Ken and I decided to look into powdered milk. What we discovered may surprise you. We found several websites where you can purchase powdered milk in #10 cans.
Honeyville Grain
(they are not an advertiser, we just like this product)
We decided to buy one can (of their ‘Milk Alternative’) to see if it would suit our palettes. After our first pitcher, we were hooked and here’s why.

Milk Taste Test
http://eatingfoodstorage.blogspot.com/2010/06/milk-taste-test.html
I decided to find out once and for all which powdered milk my family likes best. I didn't realize how important this was until we started living off food storage. I thought (naively) that if there was nothing else to drink, they would drink it. Wrong. Before we started food storage, my family was drinking 5 gallons of milk a week. On powdered milk it dropped down to less than one gallon per week, and most of that was used in cooking rather than for drinking. So I learned 2 important lessons: ---CONTINUED---

A Challenge for You
http://eatingfoodstorage.blogspot.com/2010/09/challenge-for-you.html

I tried a new kind of milk this week. It's GREAT! Definitely my favorite so far. And unlike Morning Moos, it's real milk, and not milk substitute. It's called Country Cream by Grandma's Country Foods. So far this is the winner to replace all the milk I have stored from the cannery. Shipping is kind of pricey but I hear that it is also available at Macey's grocery stores in Utah Valley. I'll have to have my sister check it out for me. ---CONTINUED---

Storage of Dry Milk
http://extension.usu.edu/files/publications/publication/FN_177.pdf
Types of Nonfat Dry Milk
Regular and instant nonfat dry milk are made from skim milk that has been dried by spraying into hot air. Instant milk is regular milk which has been further processed causing it to clump together which results in a product that is easier to reconstitute with water than is regular nonfat dry milk. They both have the same nutrient composition. Regular nonfat dry milk is more compact and will require less storage space, however, it is harder to reconstitute.
The most common type of dried milk to be found in grocery stores is instant nonfat dry milk.
Dried whole milk may also be available, however because of the fat present, it will not store as well as nonfat dry milk.
Dried buttermilk is available to be used in recipes calling for buttermilk. It will not keep quite as long as nonfat dried milk since is has a slightly higher fat level. ---CONTINUED---

Rice Milk-Home Made
Hat Tip to Davarm @ Prepared Society.com for this recipe:
How to Make Rice Milk
The majority of us who are prepping will not have immediate access to dairy animals if TSHF and unless you have adequate stores powdered skim or whole milk you will be out of luck in that department.
A passable alternative can be made from white rice. It does not have the nutritional content of animal milk but you can put it on cereal or drink it plain as a beverage and it does have an advantage, its fat free.
It is simple to make and it tastes pretty good also.
Rice Milk
1 cup White Rice
4 to 6 cups Water
1 tsp Vanilla
Sugar to taste
Wash the rice thoroughly then place in the saucepan with about half the water and cook until soft.
Mix rice with the remaining water and vanilla, pour into a blender and puree until the mixture is completely smooth.
Let the mixture sit until the sediments sink to the bottom of the blender and then pour through a strainer to catch any particles that didn't settle out. If the liquid is to thick to run through the strainer, add more water.
The amount of water can be adjusted to suit individual preferences and you can add sugar to taste if desired. It can also be mixed with animal milk as an extender.
Most of us will have large quantities of rice stored so this can be made as long as the rice holds out.

Stocking Up on Dried Milk: A Tutorial
https://thesurvivalmom.com/stocking-up-on-dried-milk-a-tutorial/
Many dehydrated and freeze-dried foods are easy to add to our food storage pantries because we know what to expect when we buy them. There’s no big surprise when you open a can of dehydrated onions or freeze-dried strawberries. However, when it comes to dried milk, there are lots of confusing options. Which are best for drinking? Baking? What about the so-called “milk alternatives”? ---CONTINUED---

Re: Milk . . . . .
Our Dollar store does not have it anymore. When I asked why, they said it's because we have a state-set minimum for milk prices and the boxes couldn't be sold within that minimum, at $1/box anymore. I put ours in the freezer, but still had it too long. Had to dump a LOT of boxes out. It was pretty curdled. Should have rotated it out more often. The Dollar Tree has shelf stable milk. I drank a lot of it in the military , but its a acquired taste. I think it has a 2yr shelf life..

Can You Freeze Milk?
https://www.americandairy.com/news-and-events/dairy-diary/can-you-freeze-milk.stml
Whether it's a big storm coming or a public health concern, we often hear about people going to the grocery store to stock up on essentials like milk and bread.
But, what can you do if you want to stock up on milk but worry about it expiring before you can safely get back to a grocery store? The answer, like so many foods, is simple. You can freeze your milk!
You can stock up on your favorite brand of milk and freeze it, by following these steps. Another option is to stock up on a shelf-stable variety, which has all the same nutrition. ---CONTINUED---

They usually have shelf stable milk at the Dollar Tree.. It's not the best tasting stuff in the world , but it's not bad if really cold

Re: Milk . . . . .
I don't mess with the liquid milks, too expensive, short shelf life.
I buy the powdered stuff, cheaper and shelf life a lot longer.
I've decided to tier my milk supply. Going to freeze smaller sizes and use one with powdered milk to stretch it out and make my powdered stuff taste better. Also bought boxed almond milk. Will also use that to mix with powdered milk.

Storing Dry Milks Shelf Life of Dry Milks
https://www.usaemergencysupply.com/information-center/self-reliance/food-storage-frequently-asked-questions/storing-dry-milk
Dry milk products are probably the most sensitive to environmental conditions storage foods there are, particularly to temperature and moisture content. Their vitamins A and D are also photosensitive and will break down rapidly if exposed to light.
The area where your dry milk is stored should be kept as cool as possible. If it is possible to do so, air-conditioning or even refrigeration can greatly extend the nutrient shelf life.

Re: Milk . . . . .
Violet posted the following, in the Oats thread. Thought I'd share it here, too:
Think Oat Milk would be cheaper than trying to store powdered milk? I've been using oat milk lately and never thought about just making it when TSHTF. I have bulk oat stored!!! WooHoo https://www.foodnetwork.com/recipes/food-network-kitchen/homemade-oat-milk-5234180
